Vegetarian Mexican Recipes
Traditionally, in Australia and some other countries, meat and
potatoes are the mainstay of the diet. While this can be very tasty,
it’s probably not the healthiest choice. Ironically enough, those whom
eat that kind of diet seem to think a vegetarian diet is boring. Oh,
contraire. There is no limit to what you can do with a vegetarian diet
and vegetarian recipes, and the best news is that many of the countries
in the world already have diets that fit right in with vegetarianism. So
if you like ethnic foods, like Mexican food, Italian food, Indian food
and so on, you’re a great candidate for a vegetarian diet.
Vegetarian Mexican Food
This is probably my favorite and maybe the easiest. This is because
you can wrap just about anything up in a tortilla and it tastes great.
Add a little salsa, green chili sauce, pico de gallo, hot sauce and
cilantro and you are ready to eat. Many beans such as pintos, black
beans and others go well in Mexican dishes.
Chile Rellano Casserole is one of my favorite vegetarian dishes. Here’s
the quick rundown on that:
- 1 lb. hamburger substitute (soy product called TVP – textured
vegetable protein)
- 1/4 C flour
- 1 onion chopped (med small)
- 2 can whole green chilis (4 oz)
- 4 eggs
- 1 cup grated cheese (longhorn is best)
- 1 3/4 C. milk
- Salt & Pepper to taste
- Few dashes of hot sauce if desired
Brown the TVP and onions. Beat the eggs, set aside. Combine milk and
flour and whisk until well blended. Add eggs to the mixture. Split whole
green chilies and take the seeds out. Layer the chilies on bottom of a
8X8 aluminum baking dish. Add the TVP on top of that and pour egg
mixture over that. Sprinkle cheese over that. Bake at 350 degrees 45
minutes to 1hour. Great with veggie tacos or enchiladas. |
