Vegetarian Chinese Food

Another favorite that’s easy to make is Chinese stir fry. It’s very
healthy and very fast and easy to make. I do it the simple way…
I buy a bag of frozen mixed stir fry veggies instead of cutting up all
the fresh vegetables myself. Fresh is healthier if you want to spend the
time, but frozen is a fairly close second. Usually you can get mixed
stir fry veggies that include snap peas, green beans, pearl onions, red
and green bell peppers, and maybe some squash and other stuff. Pick the
package that suits you.
Rinse of the frozen veggies well because they will probably have ice
on them. Make sure to pat them dry well, too, because you’re going to
put them in very hot oil.
Before you stir fry the veggies, take a package of firm tofu that has
been frozen and thawed and all the moisture squeezed out. Cut it into
about 1 inch cubes and you are going to fry it in oil (I prefer to coat
mine in flour for better flavor). Cook them until lightly brown.
TIP: When frying in oil, don’t use olive oil. It’s good for you,
but high heat destroys what’s in it that’s good for you, so maybe try
peanut oil.
Set that aside to drain on a paper towel and in just a little oil on
high heat, stir fry the veggies. Don’t put a whole bag at a time because
they won’t stir fry right. Add about ¼ of a bag at a time, set aside and
do more.
Now, after those are all done, put everything back into the hot pan
to combine together and finish the cooking. You can add a little soy
sauce while cooking for flavor, and serve with a dip like mustard sauce.
Chopsticks are not necessary at this time, but they are fun :-) |
