Low Fat Vegetarian Recipes – Make That Fat Go Away!
There’s health
food and there’s health junk. Just because you are on a vegetarian diet
does not mean you can eat candy and ice cream and a bunch of other
garbage just because you don’t eat meat. Ouch – how harsh, right? Not at
all. It’s the truth. Even vegetarians could learn from low fat dieters
and there are a lot of good low fat vegetarian recipes to help you. But first you should know that a junk food filled vegetarian diet is as
bad as any other diet you could be on because it’s sugars, refined
carbohydrates, high sodium and saturated fats (among other things) that
cause health problems (and yes, you can get saturated fats on a
vegetarian diet; mayonnaise, butter, cheese, etc.) While it doesn’t hurt to have a high fat meal once in awhile, and while
it’s true that if you’re eating properly most of the time you can get by
with some ‘health junk’ now and then, you will likely feel better and
keep your weight in check better by employing some low fat vegetarian
recipes now and then. Now the good news is that low fat vegetarian recipes aren’t that hard to
come by and they can be quite satisfying. Here are a few I’ve tried and
like very much. Low Fat Vegetarian Burritos
There are two versions of these I like; one with beans and the other
with just veggies. Bean burritos are so easy to make and so fun to eat. You can buy canned
vegetarian beans in the store, so all you have to do is open them, heat
them, warm a whole wheat tortilla, put the beans on it and dress it up
with some favorite garnishes like low fat cheese, picante sauce, chopped
green or regular onions, chopped olives, cilantro, crumbled tofu, brown
rice or whatever comes to mind. Along with the whole wheat tortilla, the
brown rice, low fat cheese,and tofu help to make a complete protein out
of the burrito. After topping it with these goodies, just fold it over then roll up your
sleeves and enjoy. I like to omit the brown rice from the burrito
sometimes and make a brown rice side dish and add picante sauce to it to
make a Spanish rice. It’s great! Vegetable burritos are another fast low fat vegetarian recipe I love.
These are great for a light meal, such as a lunch or even a snack.
In a skillet, use just enough olive oil to sauté a few slices of onion.
Olive oil is a good fat, so don’t be afraid of it, but if you prefer you
can sauté the onions in a little water. Chop about 2 cups worth of
broccoli and cauliflower until smaller than what you would call ‘bite
sized’ pieces. Steam them until soft and drain them well.
Warm a large whole wheat tortilla and spread a thin layer of low fat
mayonnaise on it, then place the drained veggies (including the onion)
in the center of the tortilla. Shred a little carrot and red cabbage on
the ingredients, salt and pepper to taste and wrap up the tortilla
around the food. This tastes much better than it sounds and you may have
a hard time stopping at one! |
